Healthy Simple Meals: Salmon and Pineapple Salsa Recipe
I’ve grown quite the affinity for salmon lately. Though I would never try to personally swim upstream myself, I admire their plight. And in addition to tasting good, there’s a ton of nutritional benefits to salmon. We’re talking protein, potassium, vitamins, and the holy grail: omega-3 fatty acids. But sometimes you need to dress up your fish – that’s why I’m a huge fan of this salmon and pineapple salsa recipe.
Most of the pineapple salsa creations I’ve seen utilize cilantro. I know cilantro is a VERY divisive foodstuff, and I’m not looking to cause any fights here. So I’ma ditch cilantro – if you enjoy it, feel free to add it in. If you hate it, well, you won’t need to make any alterations here.
It’s All in the Salsa
You could certainly go wild with your salmon prep. In this case, I think a modest amount of pepper and a dash of salt work just fine here. However, if you have a go-to rub for your fish, by all means, go right ahead.
The highlight of this salmon and pineapple salsa recipe is the salsa, as you probably surmised from the title of this section. It’s a pretty easy thing to put together – and I’ve actually found mixing it up with my hands gets the best results. Of course, you should WASH your hands first, but I don’t need to tell you that, do I?
As a nice bonus, you can prep your pineapple salsa while the salmon is cooking. I LIKE THAT.
Ingredients for Salmon and Pineapple Salsa Recipe (Serves 2)
2 salmon fillets (about ¼ – ½ pound each)
1 cup diced pineapple
¼ cup red onion, diced
3 tablespoons lime juice
1 tablespoon honey
½ teaspoon of salt
1 teaspoon of pepper
Instructions
1. Preheat oven to 400 degrees. Lightly season salmon with sprinkles of salt and pepper. Once oven is heated, place salmon on a pan. Line with aluminum foil for easier cleanup.
2. In a large bowl, mix pineapple, onion, lime juice, honey, salt and pepper. Use hands or a wooden spoon to coat.
3. Cook salmon about 10 minutes per inch. When done, top with pineapple salsa. Serve and enjoy!

Notes
Lemon juice can be used in place of lime juice.
