Simple Recipes: Turkey, Avocado and Sweet Potato Hash
Between a full-time job, running this food blog, writing a novel and a book of short stories, playing in a band, and trying to stay in shape, I am one busy boy. Sometimes the last thing I want to do is cook dinner, especially if it’s going to take upwards of six hours to put it all together. As Sweet Brown would say, “ain’t nobody got time for that!” Luckily, we’ve got simple recipes to come to the rescue.
And it really doesn’t get much simpler than this. The hardest part of this turkey, avocado and sweet potato hash recipe is cutting up your potatoes. And if that’s the most difficult thing you do all day, you, my friend, have had an easy day. You even get OPTIONS in this recipe, which I’m a huge fan of. Want a true sweet potato hash? Cube those bad boys up. Craving sweet potato fries instead? Go right ahead and wedge ‘em. The world is your oyster (or sweet potato) and you’ll be better off because of it.
Simple Recipes, Simple Seasonings
While your sweet potato hashfries are cooking, you’ll take care of your turkey. That sounds like a euphemism, but I promise you it is not. Turkey can be greatly boosted by just a little bit of seasoning. This recipe combines the awesome Pod & Bean Caribbean Seasoning Blend (which utilizes hints of chocolate, mmm) with Italian herbs and seasoning you can find at your local grocery store.
But of course, as we all know, variety is the spice of life. Which is why you can throw in your favorite seasoning and it’ll still be wonderful. Some garlic powder would be delicious, as would a sweet onion herb mix. It’s all up to your preference – just make sure to include some kind of seasoning. Your turkey will thank you.
The greatest part? You can knock everything out in about 40 minutes, including cooking and baking time. See? I told you this fell under “simple recipes.” And you don’t need Miley Cyrus to tell you – that’s pretty cool! Enjoy!
Ingredients (Total time: ~40 minutes, serves 3-4)
16 oz 93 percent lean ground turkey
2 large sweet potatoes
2 large avocados
3-4 eggs
2 tablespoon seasoning (this recipe uses Pod & Bean Caribbean Seasoning Blend and general Italian herbs)
1 teaspoon cumin
2 tablespoons olive oil
Salt ‘n Pepa to taste (and to listen to, if you want)
Instructions
1. Preheat oven to 425 degrees. Peel and cut sweet potatoes into small cubes or slices (dealer’s choice). Evenly coat a baking sheet with olive oil or nonstick cooking spray.
2. Toss sweet potatoes in a small bowl with cumin, olive oil, salt, and pepper. Arrange on baking sheet, leaving a little space between pieces.
3. Bake until sweet potato pieces are tender, occasionally turning them over. Give them about 17-22 minutes in the oven.
4. While sweet potatoes are cooking, put ground turkey in a nonstick skillet over medium-high heat. Cook until turkey begins to brown (about 8-12 minutes), then add seasoning and cook for 3-5 more minutes.
5. Arrange sweet potato hash and turkey on a plate. Fry an egg on your skillet and place on top of hash and turkey once done. Place slices of avocado around the edges of your dish. Enjoy!
