BBQ Shredded Chicken and Sweet Potatoes Recipe

Ingredients:

Shredded chicken – a couple pounds’ worth will feed ya for days

Sweet potatoes – two to three, depending how hungry you are

Barbecue sauce – I love me some Sweet Baby Ray’s for this

This is literally one of the easiest things you can make, but my goodness is it delicious. Here’s how it’ll go down:

Cut the ends off of the sweet potatoes. Then cut each sweet potato in half lengthwise. This will be the hardest part of the meal because sweet potatoes are hard to cut when they’re uncooked. I recommend using one of your sharpest knives, but I suppose a katana or a broadsword would work in a pinch.

Once those sweet potatoes are sawed in half, throw ‘em on your baking pan. If you want to quicken the process, you can drizzle a little olive oil on the tops of the sweet potatoes, but then put the cut sides down on the parchment paper. With olive oil, it should take 25-30 minutes to cook; without it, give it closer to 35-40 minutes. You can tell when sweet potatoes are done by their squeezability. If they give a little, like you’re using a stress ball, you’ll be doing alright. You can also stick a fork in the orange goodness and if it easily swallows the tines, you’re good to go.

When you have about five to ten minutes left on your sweet potatoes, you can start cooking on the chicken. Dump all of the shredded chicken into the saucepan, and then get your BBQ-squeezin’ fingers ready. I get pretty liberal with my Sweet Baby Ray’s, applying a good amount on that beautiful chicken. You’ll want to thoroughly mix the sauce up with the chicken using a fork or stirring spoon, so it’s really up to you how much you need to accomplish a good mix.

Once the shredded chicken is nicely coated and at a hot temperature, you’re just about done. If the sweet potatoes are at their prime tenderness, take them out of the oven and let cool for at least six minutes. We aren’t trying to burn any roofs of our mouths here. Sprinkle the chicken over the tops of the sweet potatoes and CONGRATS! You’re ready to chow down. Enjoy!
