Angel Food Cake Cupcakes Recipe
Okay, my phantastic phoodies, let me apologize first off for using “phantastic.” But sometimes I’m just over the moon with excitement about a recipe. This is one of those times. An angel food cake cupcake recipe that doesn’t have a ton of calories? Does such a thing even exist? Well, yes, it does. It’s this recipe.
Depending on how heavy you go on the Cool Whip, this will run you about 60 calories a cupcake. Plus you’re getting strawberries – which are an excellent source of Vitamin C and K – AND blueberries. The bluebs give you a good dose of fiber and potassium and don’t have cholesterol in ‘em. Score!
The Cheat Way to Make This Cupcake Recipe
Creating angel food cake is not the most difficult task in the world. You’re basically just doing a little egg-white beating, adding a few other ingredients, and then sifting together salt, sugar, and flour. This recipe explains it far better (just steps 1 through 3) than I just did.
But here’s the thing: what if you don’t have those materials? I mean, you should, but there have been many times when I’ve gone to the pantry and – gasp! – a key ingredient is missing. In those cases, I’ve usually thrown everything away. Even foods that weren’t a part of the recipe. It’s all a waste, why not just get rid of that sadness?
No, I’m just kidding. That doesn’t actually happen. But it is kind of a bummer, isn’t it?
That’s why I’m not opposed to using a little bit of a cheat code here and getting a pre-made mix. It’ll still taste quite amazing, and that’s the important thing.
As For The Fruity Toppings
Now, I’m not saying to go absolutely ham on the fruits. They’ll still inject you with copious amounts of sugar if you have too many. But for our purposes, you’re using anywhere between ½ a strawberry and 2-4 blueberries per cupcake. That’s not gonna have anyone running for the hills.
It will have them running towards your cupcakes, though. Because they’ll want to eat them. Sharing is optional. You just do you.
This cupcake recipe not only makes for a tasty treat, it’s easy to do. That’s glorious. Enjoy!
Ingredients (Makes About 30 Cupcakes)
1 box of angel food cake mix
8 oz. container Cool Whip Free/Lite Whipped Topping
1 lb. strawberries, cut into halves or quarters
1 lb. blueberries
Instructions
1. Preheat oven to 350 degrees (adjust if the cake box says otherwise). Prepare angel food cake according to the directions on the box. Line a cupcake pan with cupcake liners.
2. Spoon cake batter into cupcake liners until they’re roughly ⅔ of the way full.
3. Bake 8 – 10 minutes or until the top of your cupcakes are slightly colored. Let cupcakes cool completely.
4. Add 1-2 tablespoons of Cool Whip to each cupcake, then top with strawberries, blueberries, or a combination of both. Eat cupcakes and be merry.
