Recipe: Honey Banana Grapefruit Salad
It’s been a hot minute since I’ve had some grapefruit, and wow, I had forgotten how tasty it is. Not only that, grapefruits have a ton of health benefits; they’re a good source of Vitamins A and C, they can help decrease the risk of diabetes and heart disease, and they’re also said to provide increased energy while contributing to weight loss. They also provide a nice contrast to just about anything they’re mixed with, which is why this honey banana grapefruit salad recipe is a really fun (and really easy) way to use them. It’s a great option for breakfast or a mid-afternoon snack.
Ingredients (serves 3-4)
2 grapefruits – if you really want to cheat, you can get yours pre-sliced
1 large banana or two small bananas, sliced
1.5 tablespoon of honey
1 tablespoon of mint, chopped

First things first: if you have a serrated spoon, that will make your life SO much easier. You can just poke out the grapefruit wedges into your mixing bowl without risking slicing a finger off. If you don’t have a serrated spoon, you’ll have to go the old-fashioned route and make precision cuts around each segment of grapefruit. About halfway through the process of cutting, and then again after all the wedges are out, squeeze some of the grapefruit juice into the bowl. You’ll want about 1/3 of juice total, but don’t fret too much over the exact amount.
This Part Is Bananas, B-A-N-A-N-A-S
Allow the grapefruit wedges to marinate in the bowl while you slice a banana and chop the mint. One large banana should be plenty, especially, if your slices are thin enough, but if you’re craving some additional potassium, who am I to stop you?
Don’t worry too much about finely chopping the mint, either. It works well prepared as little sprigs that you can sprinkle on after you’ve added the banana to your mixing bowl.
You’re So Sweet, Honey
The final touch is a little dash of sweetness. As an old-timey monorail conductor might say, honey is “just the ticket” for said sweetness. I just drizzle it over the bowl for 2-3 seconds, making sure all of the contents are getting a little honey love. Just to be sure, gently toss everything using a spoon or a pair of tongs.
